Without knowing the setup and requirements details, how about adding 2 more boxes - Mac Studio Ultras, with 128-256-512GB of Unified Memory to use exclusively for video rendering, and let SI run on the current hosts alone all the time? Mac Studios would cost must less, especially if leased for 36 months, with arguably comparable video editing performance.
